Sweet & Spicy Grilled Chicken Thighs

Who’s up for a summer grilling recipe?? I love fresh pineapple in the summer, so I created these jalapeno pineapple chicken thighs! You can also make it with chicken breast, but I love the flavor chicken thighs give. This is an easy macro friendly meal that even my kids gobbled up with a side of rice and some grilled veggies. You will have plenty of fresh pineapple left over to grill a few slices for some dessert.  Plus, the added bonus of consuming pineapple is an enzyme called bromelain, which helps aid in digestion, and pineapple contains higher amounts of flavonoid antioxidants. So you get to enjoy your tasty grilled meal with some hidden healing benefits 😉

Ingredients:

1 cup fresh pineapple

1 jalapeno

1 tsp minced garlic

1 TBSP extra virgin olive oil

Salt and pepper to taste

3lbs of chicken thighs (Skin and bone removed)

Instructions:

1.       Combine fresh pineapple, chopped jalapeno (seeds removed to reduce heat or leave for more spice), extra virgin olive oil and garlic in a blender until smooth.

2.     Place chicken thighs and pineapple blend into a Ziplock bag or container, coat chicken. Place it back into refrigerator to marinate for about 2 hrs. Gently mix once or twice during the time.

3.     When ready to cook, remove Chicken thighs from the refrigerator and place on plate. Lightly season with salt and pepper.

4.     Heat grill. Once grill is hot place chicken thighs on the grill cooking about 4-5 min per side or until the internal chicken temp reaches 165 Fahrenheit.

5.     Remove from grill and serve with some Rice, Quinoa and favorite summer squash!
